Editorial Reviews:

Product Description
The Chasseur Cast Iron range has been manufactured to the highest standards by skilled craftsmen, using time honoured techniques at our foundry in the Champagne Ardennes region of France, for over 70 years. Today these age old techniques have been updated, using modern technology where possible, to ensure that the foundry is able to produce consistently top quality products whilst reducing the environmental impact on their surrounding area. The environmental issues have been addressed through the recycling of both raw materials and materials used in the manufacture as well as the installation of a super efficient furnace with a sophisticated filtering system, making it one of the cleanest in Europe.

5 out of 5 stars First class Grill Pan at a "grab it while you can" price   October 10, 2004

I read an article in Oct 3 Sunday Times STYLE section, p.75 "Steak out" and decided to follow "how to cook a steak properly".
It required using a cast-iron griddle. I found this one on Amazon and have been using it daily for almost a week.
It gives superb results if used properly. At first I was a bit hesitant to get it smoking as per instructions but that is how it's supposed to be (they never told me that in catering college some 30 years ago!) and once you get used to it it produces excellent results precisely because you can get searingly hot heat which stops the meat sticking to the surface...and that's how it's done, D'oh!
Forget trying to cook steaks properly in a non-stick pan - you cannot get that heat without damaging the non-stick surface (I guess).

I recommend this item without reservation or hesitation and at less than 20, it's a serious bit of kit at an excellent price!

5 out of 5 stars The Aston Martin of Kitchen Pans!!   May 2, 2006

After dropping lots of heavy hints I was lucky enough to get the chasseur grill pan for my birthday. Now that I have one I could not imagine my life without it (my obssession doesn't quite run to taking the pan to bed...not yet).

The first time I used the pan I used a small amount of olive oil as with a normal frying pan but it didn't give me the results I was looking for. Since then I have found that you get the best results if you just season your meat/fish and place it on the pan (making sure it is on a high heat) and watch it sizzle and cook before your very eyes. The most fun part is flipping your food over and seeing the lovely chargrilled lines, what can I say? I'm very easy to please.

The grill pan makes your food taste great - moist, slightly smoked and more tender than normal frying, grilling or baking will do.

I highly recommend the chasseur grill pan. Buy one now for yourself, your family and your friends!!

5 out of 5 stars Heavy but becoming essential equipment   May 18, 2008

Don't know about how you meaties cook, but my interest in this pan was purely in reducing the fat content of an occasional indulgence in fried vegetables. I snapped one up when it hit half price and after 3 days I'm still very happy with it. It is heavy though- and because it doesn't have a long handle I found it really difficult to pick up when it was hot- I'm used to a Le Creuset frying pan so it's really just how the centre of gravity works out that makes it awkward to pick up one handed. I stuck to just using the handle to adjust the position over the hob and letting it cool completely before I moved it.
It does take a little time to season the pan. My cooking strategy is an adoption of what you would do on a barbecue- smear the side you're cooking with oil lightly applied with a pastry brush. When you put the veg down you do have to lift it a little with a fork after say 10 seconds to make sure that it doesn't stick to the grill line. I'm still learning really.
My other half was very impressed with the taste of aubergines, mushrooms and cherry tomatoes- he said they were far more flavoursome - much less masked by the taste of the oil. I liked cooking with a square pan for a change- everything seemed to fit in so much better. You do get a fairly high production of fumes though - so whack up the extractor or open a window before you cook.
