The Shinkansen sharpener has two sets of ceramic sharpening wheels coarse and medium, obliquely angled to restore knives to razor sharpness, easy to use, pour water into the reservoir, then draw knives through about 8 times between each set of wheels, recommended for global knives.

I bought one of these because I was tired with dragging out the whetstones each time my knives needed sharpening. I was surprised that this actually produced a far sharper blade than I could with a big whetstone set.

This version will take a knife from completely blunt to razor sharp with very little effort. You could probably do the classic Samurai silk scarf test on a Minosharp sharpened Global knife but it is a little impractical in the kitchen. A reasonable-sized global knife sharpened on one of these should drop through a tomato under its own weight easily.

One slight niggle (too small to dent the five star rating) - it does make a few small scratches on the knife blade. These are no worse than the general wear-and-tear marks they'll pick up with any moderate use and it shouldn't put you off.

If you use Global knives this is a must. Because it is so little effort, you'll keep your knives sharper and thus safer. Worth every penny.

A fabulous, easy to use and highly effective knife sharpener. This is the best I have ever owned. Forget expensive sharpening stones and those little cheap Kitchen Devil gadgets that lead you to lose your digits, this knife sharpener is effectively the only one you'll ever need.

I have been dithering for some time about purchasing a knife sharpener, after reading the comments of others on this particular model decided to buy.
A good decision, plus a drawer full of sharp knives!

This sharpener works really well with most Global knives. Some points I would add however:

The idea is that this sharpener is designed for Japanese and not European knives as it sharpens at a different angle. My non-Japanese knives were all cheap so I was quite happy to keep going with the rougher stone and get them into shape. The only problem was that, unlike the Global knives, most of my European knives have a bolster - the blunt bit at the end of the blade closest to the handle to stop you cutting yourself - which won't pass through the guide slots so you can't sharpen the last inch or so.

One of my Global knives was particularly blunt so I happily sawed away on the rougher stone for a while until I found it had gone slightly banana shaped i.e. concave. So just pay more attention than I did and make sure you get the whole length of the blade with each swipe.

This sharpener is advertised for use with Global knives but one of mine is a deba knife (for fish) and is only supposed to be sharpened on one side. The only way to sharpen one of these knives `properly' is to use a wet stone as this sharpener is grooved and does both sides at the same time. I'm not that fussy as I'm more likely to be using this knife on cheese than filleting a mackerel and it still gives this knife a good edge.

I bought this when I couldnt find anywhere that sharpens knives anymore and saw all the good reviews. It turned out to be a very good decision as the reviews are correct. This sharpens all knives brilliantly even cheap ones. I dont have global knives but this sharpener has easily and quickly sharpened ever knife that I own. Brilliant.
