this is the most ergonomic and effective knife ever.

it has a great handle that beats any wooden riveted handle and a blade depth and thickness that is ultra rigid and forms a good sized surface for scooping chopped food.

when shrarpening I use a conventional steel and it takes a super sharp edge in 3 or 4 strokes.

it cleans well, although I don't put it through the dishwasher

it does the cooks knifes chores with ease and has a very good rocking ability due to the right level of curvature on the blade

i bought mine in reims, france where I could compare it to Sabatier and Global - they are inferior

Quite simply a great all round kitchen knife. Its evidently very well made and has a solid feel to it. Also has great balance and a razor-sharp edge.

It is definitely the most frequently used knife I've got and I use it for almost everything.

Henckel is a superb make of knives and I would recommend them to any keen cook.

Good knife, pricey but worth every penny. Got mine a few weeks ago and havent stopped using it or cooking since. Doesnt help with the waistline, but works wonders for food preparation.

Without a shadow of a doubt this knife is superbly constructed. Build quality is excellent.

However, there is a serious drawback; the thickness of the blade.

It's too thick. When cutting large items the width of the blade forces the item apart instead of the slicing clean through, the result is that the item is actually split apart rather than cleanly sliced.

This effect is especially noticeable on root vegetables; the knife cuts most of the way through then the thick part of the blade forces the vegetable to split rather than continue the clean cut all the way through. Its ok for raw meat as that falls away from the blade as it passes through.

Overall the thickness of the blade makes it difficult to obtain a razor sharp edge, even when using Henckels own ceramic sharpener.

I cant recommend this knife.
